How Disney has used food to elevate its theme parks

Food and beverages have been an increasing part of amusements over the past two decades. Disney has been pushing the limits of food innovation for decades. They have developed unique park favourites like Mickey Mouse-shaped pretzels and ice cream bars, as well as Dole Whips.

Dennis Speigel (president of International Theme Parks Services) stated, “Rides, attractions, and food are the top three reasons people go to parks.” This is a known fact. The trend that parks have taken advantage of in recent years has been to build their attractions around places offering food and beverages.
Disney took this one step further by introducing the Star Wars Galactic Starcruiser Experience. Halcyon offers a 2-day immersive experience, which is different from other themed areas like Galaxy’s Edge, Avenger’s Campus and Pandora. They are not just stopping by for a snack or a beverage, the Halcyon guests are immersed in a Star Wars tale for 48 hours.
This meant that Brian Piasecki, chef and team member had to devise a comprehensive menu of foods for guests to enjoy over two days.
Disney will be presenting some of their most innovative and delicious food and drink creations aboard the Halcyon.
Piasecki created dishes that could be served for lunch, dinner, and breakfast. Lunch buffets include familiar items like peanut butter and jelly sandwiches, grilled cheese and tomato soup and peanut butter and jelly sandwiches.
This is a glimpse of the menu selections available onboard the Halcyon for the morning buffet.

Food trays are designed with three rectangle depressions to allow dishes to slide in place and stay put when transported onto the Crown of Corellia Dining Room. These trays have an incredibly practical design, which is great for anyone who wants to sample a lot of different foods.
Speigel stated that it is crucial to an experience. It’s something which is under scrutiny in the industry. Everybody wants to make improvements, and this includes quality, service style, plating and all other aspects. That’s something that will be here for us always, I believe.
Innovation: A long history
Disney uses food design to elevate its classic fare. But it moved into a new phase in innovation when it opened its 2017 theme park land inspired by Pandora, the planet from James Cameron’s film “Avatar.”
Disney could create their own dishes with this new area. The inspiration for the film was not translating foreign cuisines and recreating them in Epcot. The unique flavors of the food were created by chefs who used ingredients found in Brazilian, Chinese and Argentinian cooking.
Bill Coan is president and CEO at iTEC Entertainment. “Disney has a plan and is pursuing this goal to improve the experience for visitors and generate additional revenue.”
Coan stated that guests tend to be more flexible about what they eat while traveling and may choose to try new menu items.
Satu’li Canteen guests can make their own grain bowls by choosing from one of the following options: quinoa, vegetable salad or red and sweet potato haveh. You also have the option to add romaine, kale, rice, whole grains and rice. You can then top it with grilled chicken, roasted meat, shrimp, or chili-spiced tfu. There are also many dressing options.

You will also find “pods”, better known as bao buns, on the menu. These steamed buns can be found with a vegetable curry or a cheeseburger.
Unique desserts were also created by the culinary team for this themed land. A blueberry cream cheese mouse is available with passion fruit curd, and there’s a chocolate cake that has crunchy cookie crumbs with banana cream topping.

The parks have been designed with a unique look in mind that makes them both appealing and easily photographable. Parkgoers can now use Instagram to post photos of their park experiences and get suggestions for future food.
Pongu Pongu is a Tiki Bar that offers alcoholic and non-alcoholic beverages in Pandora.
Enjoy a taste of a faraway galaxy
Disney was a pioneer in this area when it opened the two Galaxy’s Edge locations in Florida, and California in 2019, respectively.
Docking Bay is the central dining area. Guests can enjoy the Braised Shaak Roast (beef stuffed with pasta) and the Felucian Spread (vegan meatballs topped with hummus), as well as other options.
Ronto Roasters also makes the famous Ronto Wrap. The Ronto Wrap is made from grilled sausages and roasted pork wrapped in a spicy slaw. This one is spicy so make sure to have something to drink.

You can also enjoy a glass from Docking Bay Phattro while you’re in California parks. This is a mix of lemonade and iced tea, with a splash of pear juice.
Oga’s Cantina offers Star Wars enthusiasts a chance to express their inner scoundrel. To enjoy familiar drinks such as Fuzzy Tauntaun or Jedi Mind Trick, you can also order foreign alcoholic drinks like Bloody Rancor.
If you don’t want to drink alcohol, there are mixed drinks that can be made with fruit juices.
Oga’s reservations fill quickly, and sometimes Oga’s specialty drink cups are sold out.

You can also purchase Coca-Cola special bottles throughout the theme park. Disney collaborated with Coca-Cola to produce stylized Coke, Sprite, and Dasani bottles. They are inspired by Star Wars’ thermal detonators, and each soda has its name in Aurebesh.
Earth-friendly food
For Disneyland’s Avengers Campus, which opened in 2021, the theme park was faced with a new challenge — innovating traditional American food.
The Disney culinary team chose to use its superhero theme to make unique menu items and to rely on Ant-Man, the Wasp and other characters.
Pym Test Kitchen, Avengers Campus’ main dining space is located. Scientists use shrinking and growing technology to create monstrously large, but surprisingly small, creations. There are many options for guests to enjoy: chicken sandwiches made with huge chicken patties; spaghetti and meatballs consisting of one large meatball each, as well as soft pretzels the size of a human head.

Pym Tasting Lab is next door, where adults can enjoy craft beer and specialty cocktails. They mix flavors with a range of ingredients, including mango and habanero as well as lemon and vanilla.
Pym Tasting Lab can be found adjacent to Pym Kitchen on Avengers Campus at Disney California Adventure Park. This lab offers adult alcoholic beverages, such as X, Molecular Meltdown and Honey Buzz.

There are 2 food trucks. Shawarma Palace is the first, in homage to “The Avengers”‘ iconic scene at mid-credits.
Terran Treats is the other. The booth can be found near the Guardians of the Galaxy attraction and offers items that are based on traditional human food. You can also find bright purple cream puffs, circular rainbow churros, and other delectable treats.
Space explorations back in the future
Disney used everything that it learned from Pandora and Galaxy’s Edge to create Star Wars Galactic Starcruiser and raised the bar.
All meals are part of your two-day package. For breakfast and lunch guests can enjoy buffet-style food. You can choose any of the dozen options available and have as many or as few as you like.
Speigel stated, “It fills your stomach and makes you feel full.”

There is a soda fountain in the dining area, as well as free Blue Milk or Green Milk. This is available at Galaxy’s Edge park. Only special alcoholic drinks can be ordered separately.
Onboard the Halcyon, a bubble waffle and grilled cheese are served alongside a creamy tomato bisque soup.

There is a fixed menu for dinner. On the Halcyon’s first night, the dinner includes a performance. As guests enjoy colorful noodles and bao buns, Gaya, the galalactic singer, begins her show. It combines pop, jazz and rhythm and beats.
Chef Piasecki noted that Gaya’s attire was reflected in the bao buns.

Second course consisted, at each table, of Bantha Beef Tenderloin (Tip Yip Chicken), Stewed Shrimps, Green Herbed Fluffy Brown Rice, Surabat Spiced Flora, and Tip Yip Chicken.
The tenderloin of beef was served alongside potatoes and tamarind glaze.
The second night’s dinner was a “taste from the galaxy”, featuring different Star Wars planet-based dishes. Disney’s culinary skills were on full display during this meal.
This bread and cheese plate was inspired by Mustafar’s Molton Planet.

Each course was presented simultaneously with many crew members coming into the dining room to bring plates. The molten planet Mustafar inspired a bread and cheese dish; the blue shrimp of Felucia arrived billowing in cool smoking smoke and the Wookie homeworld of Kashyyyk inspired a seafood and beef plate.
There are other options available on the GalacticStarcruiser’s menu to suit those who have less adventurous tastes or diet restrictions.
In the Crown of Corellia Dining Room, as well as the Sublight Lounge, you can buy alcoholic beverages. The signature cocktails are easy to recognize as they’re based on classic drinks. However, they have been elevated.
For example, the Hoth Icebreaker is similar to a lemon drop martini, but it is served in an unusual glass that is colored blue. It has a vanilla and lemon mousse as well as an isomalt garnish.
Speigel explained that Disney’s success with their starcruiser and menu and other innovations will have a ripple effect on the entire industry.
