The 50 best restaurants in the world 2021 from William Reed Media

An annual list of the world’s 50 best restaurants is back — and for the first time, one city dominated the top two spots.
Two restaurants in Copenhagen, Denmark — Noma and Geranium — ranked No. 1, and 2. 2, respectively at the “The World’s 50 Best Restaurants Awards Ceremony” held in Antwerp (Belgium) on Tuesday.
Noma is now the number five ranked person on this list, since 2010.
Since the list’s inception in 2002, European — and occasionally American — restaurants have produced the world’s top restaurant. The streak is still intact this year.
Last year’s pandemic prevented the publication of the William Reed Media annual ranking.
Noma — the world’s ‘best restaurant’ — again
Noma, headed by Rene Redzepi (chef), is well-known for its “new Nordic cuisineThis is because it relies on the use of foraged and fermented food.

Redzepi produces three menus every year — there’s the ocean season, the vegetable season, and the game and forest season — the latter which is currently being served for 2,800 Danish krones ($436) per person. Each menu contains around 20 dishes and costs $280 for wine pairing.
Every “season” offers a new menu and every experience at the restaurant is different.
Everyone was suddenly asking, “What is going on in Denmark?”

Noma was No.1 in 2010, as we stood on this platform and the speaker shouted out the word. 1, it was truly a shock to my system — to everybody’s system — and certainly a shock to our reservation system…our website crashed multiple times,” said Redzepi at yesterday’s awards ceremony. Everyone was suddenly asking, “What is going on in Denmark?”
The 50 Best announced that the No. 1 ranking was up for 2019 after the same restaurants had dominated it for over a decade. It was not possible to vote for the No.1 winners in subsequent years. Noma was closed in 2016, but it reopened at a new site in 2018 and is now eligible for competition again.

The previous No. Previous No. 1 winners are known as “The Best of the Best” Noma joins the other seven restaurants listed on this list. They include El Bulli, The Fat Duck, and The French Laundry.

This year, Europe was the dominant region with over half of all ranked restaurants being located in Europe. Asia claimed eight positions, including Odette in Singapore (No. 8 was the top-ranking continent.
Odette, a Singaporean restaurant was one of the two that made it into “The World’s 50 Best Restaurants”, the list of top 10 restaurants for 2021.

There were eight North American restaurants that made it to the top, and Pujol in Mexico was named the “Best restaurant in North America.” South America took six slots, with two — Central and Maido, both in Peru — named to the prestigious top 10 list.
Africa was the first to be included on the list. South Africa’s Wolfgat took the 50th position.
Spain left the awards with six restaurants etched onto the list — the most of any country. Near the French border, more than half the award winners are from the Basque Country. This autonomous region is renowned for its culinary excellence.
How is the list made?
So voting works. according to the 50 Best’s website
1 040 industry insiders choose the establishments. These are often referred to “…”the academy” The academy members are from 26 different geographical locations around the world and include chefs, writers, critics, chefs, and restaurateurs. Every year, the average academy member in every region changes by at least 25%.
Each member chooses 10 restaurants. William Drew, the director of content at The World’s 50 Best Restaurants, stated that there are no requirements and members can choose the restaurants they like.

CNBC’s Angus said, “For some people the food can be all; for others the wine or atmosphere may play more of an important role.” “There is no set criteria — we don’t believe there is, or should be, a type of restaurant that features in the 50 Best lists.”
Each Academy member must vote at least four restaurants from outside their region. To accommodate restricted travel and dining opportunities caused by the global pandemic, the 2021 list consisted of votes cast in January 2020 — which were never published — as well as updated regional choices, said Drew.
Others awards
The list of 50 Best restaurants was released by the 50 Best group last month, despite the fact that it is not called such. ranked from 51 to 100. The organization published its first expanded list in June — for its list of Asia’s 50 Best Bars — to recognize a greater number of deserving establishments, Mark Sansom, the list’s content editor told CNBC.
This week, the academy announced individual awards.
Peruvian chef Pia Leon claimed the World’s Best Female Chef award for her work at Lima’s Central restaurant — ranked No. 4 — as well as her first solo venture, the nature-inspired Kjolle restaurant, also in Lima, Peru.
Italy’s Lido 84 — which debuted at No.15 — received the Highest New Entry award, which is given to the restaurant that ranks the highest out of all new entrants on the list.
